Welcome/Bienvenidos to Maiz y Cal! I created this blog to share the wonderful cuisine of Mexico. My name is Raul and I love to cook and prepare Mexican food and beverages. I’m a proud Mexican American and I’m happy to have this opportunity to share recipes which I hope you’ll enjoy! We’ll explore the cuisine from the different regions of Mexico and learn about the different cooking styles and techniques each has to offer.

I’ve had the opportunity to travel to different parts of Mexico and one of my favorite things about visiting is the cuisine. From the tacos de suadero in Mexico City to the mole coloradito in Oaxaca, I’ve always enjoyed each city and the variety of food each has to offer. It’s from these travels where I learned more about my Mexican culture. Each time I returned to Mexico I wanted to understand more about the dishes from each of the regions. I would notice how the food changed from region to region as well as the cooking style, technique, and/or ingredients. Visiting different regions of Mexico really inspired me to want to cook and replicate the dishes I tried.

I’ve also learned a lot from my mom who would cook for the family almost every day. She has taught me some of the basics of Mexican cooking. Whenever I have a question about cooking in general, she is the person I like to ask for input. I’ve also been inspired by her cooking ideas and would love to cook the dishes she cooks because it’s always a culinary delight. If I could learn at least half of what my mother knows, I would be happy with my cooking!

We will cook and prepare traditional and modern dishes from all across Mexico. My goal is to document these recipes and also share what I learn along the way. These will be recipes anyone can cook at home with ingredients that are available at most grocery stores. Join me on this journey to explore the wonderful world of Mexican cuisine.
