Avocado Salsa Verde (Salsa Verde de Aguacate)

A fresh, tangy, creamy, herby and spicy salsa you can enjoy with tacos, quesadillas, tortilla chips, and many other dishes. Avocado salsa verde, or salsa verde de aguacate in Spanish, is like a guacamole and a salsa verde in one!
Avocado salsa verde is one you see in taquerias all over Mexico. It’s similar to a salsa verde, but with avocado added to it. The avocado gives the salsa a bit of a creamy texture and adds another layer of flavor. I like to have salsa verde de aguacate in my tacos, quesadillas, spooned over chicken, fish, or with tortilla chips.
The ingredients for avocado salsa verde are tomatillos, onion, garlic, chile serrano, cilantro, and avocado. The tomatillos give it a tangy and acidic flavor. The garlic adds a layer of aromatic flavor, the chile serrano gives the salsa some spicy heat, and the onion and cilantro gives it a fresh taste. The avocado gives the salsa a bit of creamy texture.

What is Avocado Salsa Verde?
Avocado salsa verde is a sauce in Mexican cuisine similar to salsa verde, but with avocado added to it, as mentioned before. There can be different variations of this salsa, depending on what flavors you prefer. This salsa can be made by cooking the tomatillos, chiles, and garlic, before combining them with the rest of the ingredients to make the salsa.
These ingredients can be cooked in water, charred on a comal or skillet, or broiled in the oven, or sautéed on some oil. Another way this salsa can be made, is with all the ingredients raw.
I prefer the raw version because by adding avocado to it, some of the acidic flavors of the tomatillos mellow out a little, but you still get plenty of tanginess in the salsa.
In the cooked versions, the tomatillos lose some of the acidity and tanginess from the applied heat. Adding avocado to these cooked ingredients when making the salsa results in an even less acidic salsa. All of these methods are great and will result in a beautiful and delicious salsa. It all depends on what you prefer in taste and flavor.
How Much Avocado to Use?
The amount of avocado you use is also personal preference. If you prefer a creamier and more avocado flavored salsa, add a whole avocado. If you prefer a less creamy texture and avocado flavor, add half an avocado. The amount of avocado is entirely up to you, both ways will make a tasty salsa. I like to use half an avocado for this salsa. Using half an avocado, the salsa gets a bit creamy and also has a the avocado flavor, but the flavor of the tomatillos is still tangy. With a whole avocado the salsa gets creamier and the avocado flavor is more intense, but the tomatillo flavor is less tangy.
How much chile to use?
Similar to salsa verde and most salsas, the amount of chile to use depends on how spicy you want your salsa to be. If you prefer a mild salsa use one chile, if you prefer a more spicy salsa use two chiles. You can add as much or as little chile as you like, the heat level is always up to you. It’s always a good idea to start with one chile and then add more until you reach the desired spice level.
Types of chile to use
Avocado salsa verde is typically made with chile jalapeño or serrano. It’s important to use a green chile because it’s what keeps the salsa green. If a red chile is used for example, the color of the salsa would not be green or would be a less green color.
How to make Avocado Salsa Verde?
- Add the tomatillos, chile serrano, peeled garlic, onion, and cilantro to a blender and blend.


- Add avocado and salt to the blender and blend.


Tips and Suggestions
- Blend salsa to desired consistency. If you prefer a chunky salsa, blend at a lower speed, if you prefer a smooth salsa, blend at higher speed. If you prefer a medium consistency, blend at a medium speed. In any case blend until you have the desired consistency and texture.
- When blending start a low speed and then gradually increase the speed as needed or until desired consistency is achieved.
- Taste for salt and add more to taste if needed.

This salsa can be stored in the refrigerator for up to 3 to 4 days. Please store in an airtight container to maintain freshness.
What to use Avocado Salsa Verde with?
This salsa can be used to accompany many dishes and foods. It’s a great salsa for tacos, quesadillas, tortas, sandwiches, and spooned over fish or chicken. Another great way to eat it is with tostadas or tortilla chips.

Ingredients
Method
- Transfer all ingredients to a blender, except for the avocado and salt. If needed, chop the tomatillos and chiles to make it easier for the blender to puree the ingredients.
- Blend on medium speed until the ingredients are well incorporated.
- Scoop in half the avocado and add salt to taste.
- Blend on medium speed until avocado is well incorporated into the salsa.
- For a creamier avocado salsa verde, scoop in the other half of the avocado and blend on medium speed until well incorporated.
Notes
- If you prefer a spicier salsa, use chile serrano. If you want a more mild salsa, use chile jalapeño.
- Adjust the spice level of the salsa by either removing or leaving the seeds and veins of the chiles. If you prefer a mild salsa remove the seeds and veins of the chiles used. If you prefer a spicy salsa leave the seeds and veins. If you want a medium spice level you can remove some but not all the seeds and veins.
- If you prefer spicier salsa, add more chile serrano or jalapeño to taste.
- If you prefer a creamier avocado salsa verde, add both avocado halves.
- Blend salsa to desired consistency. If you prefer a chunky salsa, blend at a lower speed, if you prefer a smooth salsa, blend at a higher speed. I prefer a mix of both, so a bit chunky and a bit smooth. I usually blend at a medium speed until I have the preferred texture.
- When blending start at a low speed and then gradually increase the speed to achieve the consistency you like.
- Taste for salt and add more to taste if needed.
